I whipped up this delicious meal yesterday on my lunch break- it’s made up entirely of leftovers: kale, red pepper, black beans, shells and red wine. It only took a few minutes to heat up and it was full of flavor. I decided to enjoy this healthy dish on my front porch with Roscoe sitting behind me (on my desk inside of course). It was relaxing, fresh and just what I needed to break up my day.
The countdown to China has already begun internally. I had a brief meeting last week with the group that I will be traveling with to discuss what to bring, what to expect and so on. And I’ve got that anxious bug in my tummy! I picked up a wonderful (and cheap!) dress at Marshalls the other day, and I cannot wait to where it out to dinner. No sneak peaks this time, unless you ask me out for a drink (of bubbly water, of course) on a Friday/Saturday evening before my departure when the weather is warm. Only then will it make an appearance.
I must confess I’m extremely nervous about the trip in regards to the food and bathroom situation. I’ve heard from multiple people that the food is rich and oily- the complete opposite of which I am eating on a daily basis here. I’m all for trying new foods but if it’s going to make me sick– I may have to pass up a few opportunities to be adventurous. And the bathrooms? I quote from the professor that has taken this trip for the past two years, “pretty rank.” Holes in the floor that I have to hover over and carry my own personal mini packet of tissues because toilet paper is pretty hard to come across while squatting. Perfect. Just what I need combined with rich, oily food. Let’s just say Pepto is already at the top of my travel list.
