Confession: I went to bed at four a.m. and was in bed until about three p.m. this afternoon. No, I was not drinking last night and yes, I did not get up to start/finish my holiday shopping. And with almost nothing in my pantry or refrigerator, I really wanted to order out. But I took a look at what I did have and decided to whip up some stuffed mushrooms!
I made these for the Christmas party I hosted at my place two weeks ago for my friends from China because a). they are quick and easy b). they are vegetarian and c). they are also gluten-free. So, with all of the leftover ingredients, mushrooms for dinner it was. Just a note, these are super good and super healthy so you could bring them to any holiday get-together and not feel guilty for having more than one.
Ingredients: (and yes, these are all estimations)
- 15 button mushrooms, wiped off with a damp cloth of course
- 1/4 red pepper
- 1/5 yellow onion
- two celery sticks
- about 2/3 cup Gruyère cheese, grated.
- seasoning, I personally chose my garlic and herb mix from the co-op
Directions: Preheat oven to 425 degrees. Pull out the stems to the mushrooms and dice into really small pieces. Dice up the onion, red pepper and celery also into really small pieces, remembering that this is the stuffing and must fit into the button tops. Saute in a tiny tad, probably like 2 tsp of EVOO on medium heat. While that is cooking, grate the cheese finely. Once all of the moisture is reduced from the veggies, add about 1 tsp of seasoning (mine has fresh pepper, garlic, sesame seeds, and other herbs; no salt) and mix. Let the veggies sit for a few moments to cool, mix in the grated cheese and stuff those little mushrooms to full capacity. Pop into the oven for 8-10 minutes and BAM! Pure deliciousness in minutes.
This probably took about 25 minutes maximum from start to finish, and yes, that also includes the plating and a quick snap of a photograph. And yes, I ate all fifteen mushrooms. Don’t judge.
Now because I’m wide awake and will most likely be up until at least midnight cleaning this darn apartment, my second and last meal of the day will be juice. I’m not going to wait up to photograph that one, but simply juice (by hand) one grapefruit, two oranges and 1/2 a lemon. This is my favorite mix first thing in the morning but figure it to be a better choice tonight because I don’t want to have a big meal before heading to bed.
My water consumption is right on; I’m already on my second SIGG bottle (each one containing 33 oz) for only being up a few hours. A glass of red wine will most likely make it into the mix. Who doesn’t get bored while cleaning?
Tomorrow I promise to be back on track with at least three healthy meals… after a decent night of sleep.
