Happy Friday, my friends!
So far, it has been a pretty fabulous day. And here’s why:
- I got an AWESOME workout in this morning bright and early before work/the sun came up.
- Friday = jeans.
- I got a present, “just because.” I’ll post a photograph once it arrives, from Malaysia.
- Dessert after lunch
And here’s what I have to look forward to this evening:
- My birthday dinner with the fam… and meeting the parents: part two.
- My new BIRKENSTOCKS!!!
- Double date at the movies with a close friend to see SAFE HOUSE!!! I love love love Denzel Washington!
And what may you ask did I have for dessert after lunch? Chocolate pudding! But not just any kind of chocolate pudding; a healthier version. Can anyone guess what the five simple ingredients are?
You guessed it!
An avocado! Half a cup of water, 1/2 teaspoon of vanilla, two or three BIG squirts of honey, and 3 whopping scoops of cocoa. Put it in the blender and BAM! Chocolate deliciousness. I personally like to keep it in the fridge for a few hours so that the cocoa has time to “blend” its flavour and I love cold pudding. Top it with some fresh fruit and enjoy.
It really is as good as it looks… and smells. But you can’t smell it; just trust me on this one. No added sugar. A serving of vegetable. A little immune support with the local honey. The perfect afternoon treat! (I found this recipe while browsing Amazon. It’s from the book, The Crazy Sexy Diet and no, I did not order it)
I don’t have much planned for the weekend other than my weekly trip to the Farmer’s Market, my scheduled runs (which will hopefully be outside and not at the school’s gym) and a close friend’s bridal shower. But I will have updates on how this evening went with my parents and the new beau and a review of my favorite local spot in downtown Troy. Stay tuned!
