I must admit, this may be my favorite week yet! The delivery included two of my most favorite veggies:
- leeks (a favorite)
- watermelon radishes
- baby arugala
- bosc pears
- mixed kale bunch (most favorite)
- country white loaf
- winesap apples
I was excited to see more winesap apples in this week’s delivery because I am going to bake and share my grandmother’s recipe for apple pie.
Both the beau and I have never cooked with celeriac but are thinking a soup paired with the leeks… we shall see! And I will most definitely share the recipe if it turns out to be a keeper. We were warned that the stalk is very strong in flavor, but I’m guessing it would be perfect for a vegetable stock (of which we are always looking to use weekly).
The arugala will most likely end up on a simple pizza with some sun-dried tomatoes my mom made from this year’s garden. And cheese, cannot forget the cheese.
We’ve both already enjoyed big slices of toasted bread paired with eggs over easy, with avocado loaded on as my jam and/or butter. So simple but oh so good!
This week when I went to pick up my veggies, I also took my first introductory class to crossfit. Gasp! You read that right, the exercise that I swore I’d never try. But I did, and that’s another post coming. It’s gloomy out there and I’ve got some catching up to do, so enjoy all that is to come!
