The delivery this week was delayed because of the snow we got, but I didn’t mind. To be completely honest, I have been one slug this vacation. Very productive the first couple of days, then nothing. I haven’t cooked as much as I had anticipated, just snacking on some local food and Christmas gifts.
The beau’s sister got us some delicious olive oils, balsamic vinegars and pasta from the new store Oliva in Clifton Park for the holiday. No joke, we’ve devoured two baguettes just by dunking them in different combinations of the oils and vinegars. This afternoon we finished the garlic, tomato and spinach pasta; I don’t think I’ve ever smelled pasta smelling so good while cooking! My favorite way to serve it up: chipotle oil, chocolate balsamic vinegar, fresh black pepper, fresh basil and raw sunflower seeds. Oh em gee! Let’s just say my body is craving the warmest foods during these winter months… thank goodness for all the root veggies being delivered!
A soup was made this week with some leftover veggies: four little heads of broccoli, potatoes, carrots and a parsnip or two. The beau wanted to test out his new hand blended I got him as his want gift. And speaking of gifts, see those darling glass berry baskets in the top photograph? They were my need gift along with a three month subscription to VeganCuts. Back to the soup: just add them to a stock with some of your favorite seasonings, simmer until soft then blend! I know it’s not the most presentable soup in color but it was full of flavor. I topped it off with my go-to favorites: raw sunflower seeds, fresh black pepper and basil.
My dad got me a tortilla press this holiday (yes, I asked for one) and I do believe it will be tested out tonight for the first time. We have plans to make a marinated tofu fajita! If all turns out well, I’ll share the recipe. Promise.
