national chili

Dear Beau: How you put up with my love of hummus, pickle juice and falafels and the consequences, I do not know. But I appreciate it. Dear MC Hammer: Giiiiiirl, I’ve got your back. Now if only we could get our butts back into the gym three-five days a week! Oh Mister Sun, Sun. Mister Golden Sun: We are about to become BFFs again, I can tell. You’ve been sneaking into my bedroom at six o’clock in the morning little by little, and I love it. Dear February: We said sayonara by participating in National Chili Day! A block of homemade and marinated baked tofu, some beans, a little veggie action and a whole lotta simmering and we had ourselves a hearty bowl of “hello Spring.”

In this week’s bag:

  •  frozen tomatoes
  • frozen broccoli
  • microgreen medley
  • parsnips
  • sweet potatoes
  • golden delicious apples
  • pea greens

No big plans this week with the veggies, just thankful to have some greens in my life. I used one of the frozen tomato purees from a previous week in our chili yesterday and let me tell you, so sweet! Typically when I buy canned tomatoes I have to try and sweeten it up or “cover up” the tin taste but not this time. The puree was still farm fresh tasting. I’m thinking I may make a small batch of tomato soup tonight with tons of garlic and black pepper- the beau and I both have a super busy weekend ahead of us and a fresh local loaf would be wonderful dipped into deliciousness. Nothing too adventurous will be tested out in the tiny kitchen, we are going to stick to simple meals; I’m working both Saturday and Sunday and the beau has his second meditation weekend/retreat.

Cheers to a happy and productive weekend!
