Let me tell you, I love it when I’m productive on the weekends and today was one of those days.
I had an AWESOME workout at The Patrizio Center this morning with Eileen Franko in connection with the Girlnetic Series. To be honest, I had never heard of this center or participated in a group class like this. I was a little apprehensive going in, thinking that it wouldn’t be enough of a work out but woah! I was sweat-ing at the end! And sore (in a good way)! I met some pretty awesome women, one in particular who has signed up for her first marathon this fall (Chicago) and is looking for a running partner for some of her longer runs. I’m glad I talked myself into going and actually can’t wait to go again.
The beau and I walked to brunch at Carmen’s (a mile each way). I know this isn’t the most appetizing photograph but it was delish! Rice with eggplant, Brussels sprouts, artichokes, tomatoes and a ton of cilantro- thank you Chris! The beau couldn’t resist the pancakes and veggie hash- he sure does love a good pancake every once in a while. We saw a few familiar faces, stopped in at the health food store and picked up some essentials for tomorrow’s hike.
I finally got everything unpacked this afternoon! Which prompted us to make a trip out to Target to pick up some curtains and organizational items. Gotta stay organized. Oh, and a quick trip to Trader Joe’s to pick up my favorite bag of greens… but they were out. Still can’t beat their prices for spring mix!
Dinner was a new recipe: buffalo cauliflower with a vegan bleu cheese, celery and salad. We used this recipe pretty much exactly- but with less tofu, more tahini and apple cider vinegar, and some fresh black pepper added. Oh, and we cooked it on the longer side to get things nice and crunchy. You could clearly tell you were eating cauliflower but oh-em-gee was it good! I’ve never had “real” bleu cheese because I’m allergic to it so I couldn’t compare; the beau said that it was a great substitute.
I’m showered. My clothes are laid out and my pack is packed. Tomorrow I’m heading up to the mountains… they are calling and I must go.
