I’ve mentioned it before, I’ll say it again: I’m a happy eater. What can I say, no better way to spread the love than over dinner. Or takeout. Or drinks. Or all of the above in one day.
When I was training for the marathon, I found myself eating whatever I wanted, whenever I wanted, and in the quantities I wanted. I honestly haven’t worked out once since marathon day but have kept up the same eating habits. Big problem-o when you aren’t burning a ton of calories each and every day. With that, my pants are a little too tight for comfort. Again.
Solution: the eat in challenge. No joke, the beau and I eat at least one meal out a day. Not good. So, I proposed a little challenge to not only help our waistlines, but our wallets. Eat out only once a week: a date night. This also includes purchasing coffee and mid-afternoon snacks. Our budget will be $150 per month on groceries(triple what I would spend last summer).
Today (Sunday) is day four, we’ve already used up our first date night during Troy Night Out by ordering chinese take-out. And we are already down 15 bucks after the Farmer’s Market and late night trip to the chopper. This is going to be interesting to say the least. I’d like to consider myself a pro with this kind of challenge, the beau on the other hand, isn’t use to budgets. But he’s a great cook, especially with random ingredients, so the meals will surely be tasty.
I’m not going to share each and every meal that we create, but instead, a few favorites. This morning the beau made some sweet potato hash using the leftover sweet potato from the other morning’s tower of power. Add in some grated onion, salt & pepper and a few eggs, you’ve got one tasty breakfy.
Today I’m making a list and heading to the market to pick up some essentials to get us through the next week or so. The trick I’ve learned is to not buy all your produce at the beginning of the month and expect it to last. Buy less but more frequently to ensure you stretch every last bit of the yumminess out.

Healthy cooking has been my challenge this year and I have done pretty well. One thing that Luke taught me was to keep cooked brown rice and parboiled chicken on hand all the time. This was in minutes you have a good meal in minutes.
